12 Days of Cookies, Day 4: Cinnamon Crackle



Cinnamon. Crackle. Aren't those wonderful words? They're so evocative of this time of year. Cinnamon is ubiquitous with Christmas. Crackle brings to mind both fires (the good kind, indoors and fully contained) and sugary cookies. Cookies like THESE. They're kind of indescribable and don't taste like they look. With hints of almond, lemon, orange, vanilla, and cinnamon, the recipe's creator was trying to hit all the Christmas notes, and she did! Of all the cookies I've made so far this season, these ended up being my husband's surprise favorites. The flavors are subtle, but they mix well and, though they are simple and look like every other cookie, end up being their own unique category. I would call this one the everything cookie, perfect for cold nights with warm tea, coffee or cocoa. If you only want to try one new cookie this season, but want it to be simple, this should be your winner. Bonus points for being quick and easy!
