12 Days of Cookies, Day 11: Peanut Butter Chocolate Chip


Peanut butter is the best! Here's how I know: Years ago we had a German exchange student. Before living with us, he'd never had bacon or peanut butter. By the time we returned him, he was addicted to both. USA! USA!

Parents of young children realize peanut butter is an iffy proposition. Allergies, most life-threatening, have become so rampant it's hardly worth it to try and offer peanut butter treats to a group of kids. With adults, however, those sort of allergies still seem blessedly rare. (I still try to label peanut butter treats as such, just in case, so allergy bearers will be aware.) Peanut butter is the dark horse of cookie season, both reliable and delicious, a proven winner for those not willing to take a chance on ginger or citrus flavors.

This recipe contains cornstarch, to make the cookies poofy and soft. It's also yummy because it combines peanut butter with its BFF, chocolate. Really, how could you go wrong? I also added peanut butter chips, because I'm a grownup and I can. (Also, I basically add them to everything. Pretty sure I read somewhere that peanut butter chips and malted milk powder extend your lifespan and should be added to everything liberally. No source on that, but I'll keep checking.)
