A couple of years ago (before the curse which shall not be named befell us all), I decided to do 12 days of cookies, wherein I baked 12 cookie recipes in a row. I did this for two reasons: curiosity and altruism. I wanted to try all those new recipes, and I wanted to pass along the gems to you. You're welcome! (OK, it was 99% sugar cravings and 1% altruism, but let's not quibble.)
The drawback, or so I feared, was that I would be completely inundated with dozens upon dozens of cookies. And I was, but only temporarily. Because I forgot that ALL THE THINGS happen at Christmas time. Seriously, ALL THE THINGS. You know what I mean--church things, school things, work things, family things. It was heavenly to be able to open the freezer and remove a few dozen cookies whenever one of these events came along. So I decided to do it again this year. This time it's my gift from me to me, a timesaving measure to take some of that mental weight off my head. (SOMEONE TELL ME THAT MENTAL WEIGHT EVENTUALLY GOES AWAY WHEN YOUR CHILDREN GET OLDER? ANYONE?? PLEASE??)
Ahem, I digress. Today's cookie is exactly what it purports to be. Chewy. Chocolate. Sugar. It's the perfect antidote to the richness overload that so often happens this time of year. (Bless it.) If you're looking for something tasty and chocolate to add to a spread or cookie platter, this one's your Huckleberry! Bonus points for being super simple and made from pantry staples.
